Chicken Parm (and whipped ricotta, and stracciatella, and pecorino, and chicken soup cheese)
I just used up a bunch of random leftovers from a holiday party this weekend. I sautéed onions, carrots, and garlic, then deglazed the pan with a bunch of red wine, added al dente rigatoni and reduced the red wine and some of the water from boiling the noodles to a glaze. From there, I added tomato sauce and brought to a simmer. Separately, I fried panko-crusted chicken thighs, dumped the noodles in the baking dish, topped it off with the fried chicken, murdered it with cheese, and popped it into a 375°F convection oven for 30 min. Served with sautéed green beans and hazelnuts.
